The Texas Trinity — brisket, pork ribs, and beef sausage — from Burnt Bean Co. in Seguin, Texas: the post oak-smoked meats that put co-founders Ernest Servantes and Dave Kirkland’s 2020 restaurant on the national stage. Texas Monthly named it the No. 1 BBQ joint in Texas in 2025; the New York Times placed it among the top 20 Texas BBQ joints of the new generation; the Michelin Guide awarded the Bib Gourmand. Three meats; the whole argument.

This package serves 15-18 people and includes

  • 1 Prime Texas Brisket (4-5 lbs.)
    • Brisket arrives whole (unsliced) and measures 12″ × 8″ × 3″
  • 1 Whole Rack Signature Pork Spare Ribs
    • Rack consists of approx. 12 ribs, weighs approx. 3 lbs. and measures 12″ × 5″ × 2″
  • 4 Post Oak Smoked Beef Sausage Links (each 4 oz.)
    • Each link measures 6″ × 1″

  • Barbecue ships frozen with ice packs, may thaw in transit.
  • Upon arrival, store in the refrigerator for up to 7 days or in the freezer for up to 3 months.

To Serve
Brisket

  • Remove brisket from the sealed package and place onto a sheet tray or large baking dish.
  • Do NOT slice before reheating, keep the brisket whole so it stays juicier.
  • Preheat the oven to 225° F.
  • Heat for approximately 75 minutes or until your desired temperature is reached.
  • Remove from the oven and slice when warm throughout.
  • Serve & enjoy!
    Optional: place a few pads of butter on top of the brisket before placing in the oven. This adds fat and helps maintain moisture.

Pork Ribs

  • Allow ribs to warm up at room temperature for 15-20 minutes to heat more evenly.
  • Preheat the oven to 225-250° F.
  • Remove meat from the package and place meat side up on a sheet pan or foil pan.
  • Loosely wrap with aluminum foil. Tip: add a couple tablespoons of water/apple juice under the rubs or a dab of sauce to create steam.
  • Heat for 30-60 minutes (depending on thickness and how cold they are).
  • Remove from the oven.
  • Serve & enjoy!
    Optional: remove the foil during the last 5-10 minutes and brush on extra barbecue sauce.

Sausage

  • Let sausages sit at room temperature for 10-15 minutes to take the chill off.
  • Preheat the oven to 225-250° F.
  • Remove sausages from the package.
  • Place onto a sheet plan or small foil pan.
  • Loosely cover with aluminum foil (don’t wrap too tight, gentle heat, not steaming).
  • Heat for 20-30 minutes, turning once halfway if they’re thick.
  • Remove from the oven when hot all the way through.
  • Serve & enjoy!
