Made by Cabot Creamery and matured by The Cellars at Jasper Hill Clothbound is an approachable but complex natural-rind, bandaged cheddar with a crumbly texture and nutty aroma. The flavor is deeply savory and slightly tangy with caramel sweetness to the finish.
Whole wheels are delivered wrapped in specialized cheese paper; quarter and eighth wheels are delivered vac-sealed to preserve freshness.

Today, their aging facility is regarded as one of the best in America and is the final stop for cheeses coming from six different artisan creameries.
