Royer’s uses whole Texas Pecans, each pecan is a candy treat by itself. This pie is named after Ann Criswell, the esteemed food editor for the Houston Chronicle for some 36 years. The recipe comes out of her beautiful coffee table cookbook “Texas The Beautiful Cookbook.”

To Serve

- If Frozen, thaw on counter for a few hours until pie reaches room temperature.
- Preheat oven to 250° F.
- Heat pie for 15-20 minutes or just until the middle is nice and gooey!

Texas's Legendary Pie Heaven

Bud, “the Pieman” Royer has been cranking out some mighty fine handmade pies that are the definition of rustic charm. Half of your pie oozes out after carving a slice, which is okay, since each pie is piled high with brown sugar and creamy fillings. Bud estimates he serves around 300 pies per weekend, which is a pretty tall order, considering that he’s located in a small Texas town halfway between Austin and Houston with a population of 81.
Either Bud’s built himself quite the following or everyone in Round Top, TX eats pie for breakfast, lunch and dinner (in which case, we’re moving).
