After almost 20 years in corporate America, T-Rex Cookie Company founder Tina Rexing decided to unshackle herself from her desk in 2015 and work full-time baking what is considered by many to be the best cookie in America. While she may have spent every day sitting in an office, much of those two decades was spent competing at the Minnesota State fair with her baked goods, refining her recipes each time.
