When Joey Veneroni lost his job during the pandemic, he turned to what he knew best: baking. Armed with a beloved family recipe and a passion for sweets, he poured his heart into creating the perfect Italian rainbow cookie. Once that recipe was perfected, Joey and his wife Jennifer turned their attention to cupcakes and more rainbow-colored treats, and Uncle Joey’s Rainbow Explosion was born. Located in Farmingdale on New York’s Long Island, Uncle Joey’s has become a Main Street favorite for its unique variety of rainbow cookie-inspired desserts, each crafted with care, creativity, and a splash of color.
This package includes your choice of 4 or 8 Cannoli Rainbow Cupcakes
- Each cupcake measures approx. 2.5″ × 3″ and weighs approx. 6 oz.
- Cupcakes ship with ice packs, may thaw in transit.
- Upon arrival, store cupcakes in the refrigerator for up to 10 days.
- To store for longer, keep in an airtight container in the freezer for up to 2 months.

- If frozen, let thaw overnight in the refrigerator, or on the counter for 1-2 hours.
