Uncle Joey’s Rainbow Explosion is a story about turning lemons into lemonade – or more specifically, rainbow cookies & cupcakes! When Joey Veneroni lost his job during the pandemic, he turned to what he knew best: baking. Armed with a beloved family recipe and a passion for sweets, he poured his heart into creating the perfect Italian rainbow cookie. Once that recipe was perfected – layers of buttery almond cake and raspberry jelly enrobed in dark chocolate – Joey and his wife Jennifer turned their attention to cupcakes and more rainbow-colored treats, and Uncle Joey’s Rainbow Explosion was born.

Located in Farmingdale on New York’s Long Island, Uncle Joey’s has become a Main Street favorite for its unique variety of rainbow cookie-inspired desserts, each one crafted with care, creativity, and a splash of color. Everything they serve is baked from scratch right on the premises, using only the highest-quality ingredients.
