Each piece is handcrafted with humanely-raised pork, classic spices, and old-world technique—spiced, and slowly seasoned to perfection. Whether gifted or served, this collection is a feast for the senses.

Inside you’ll find:

Holiday Kielbasa: Smoked Kielbasa celebrates the rich, savory tradition of Eastern Europe. Crafted with a blend of ham, garlic, and freshly picked marjoram, it’s hearty, smoky, and perfectly balanced. Serve it alongside roasted root vegetables or pan-seared with a spoonful of whole-grain mustard for a meal that tastes like home and holiday cheer combined.

Cotechino: A true Italian New Year’s classic—this Cotechino is richly seasoned with warm baking spices, wine, and pork skin for velvety texture and deep flavor. In Italy, eating Cotechino with lentils on New Year’s Day is said to bring abundance and luck for the year ahead. We say it’s also simply delicious.

Portland, Oregon’s Olympia Provisions has taken the wonderful French concept of charcuterie and elevated it into an art form, crafting a variety of salumi from all natural Northwest pork using old world techniques that have all but gone extinct. Salumist Elias Cairo grew up with a father who made charcuterie at home. He opened Olympia Provisions, Oregon’s first USDA-approved salumeria, in 2009, and the rest is delicious history.

This package includes

  • Holiday Kielbasa (1 lb.)
  • Cotechino (12 oz.)
  • Saucisson D’Alsace (4.5 oz.)
  • Ships with ice packs, may thaw in transit.
  • Upon arrival, store meats in an air-tight container in the refrigerator for 3-4 days. Enjoy by “best by” date.
  • Salami should be wrapped in its original paper and stored in a tupperware or plastic bag.
