Junior’s original sponge-cake-bottom cheesecake — the recipe Harry Rosen and Danish baker Eigel Peterson built in the 1950s at the Downtown Brooklyn landmark — topped with cherries and finished with a homemade streusel crumb. The three-generation Rosen family has been making this at Flatbush and DeKalb since Junior’s opened on Election Day 1950; the cherry crumb is among the most requested seasonal variations on the original.
