- Cabot Clothbound Cheddar Cheese Wedge (6 oz.) – A new American classic—this traditional style cheddar is savory and bright with a sturdy, crystalline texture and a caramelized finish. Made by our neighbors at Cabot Cooperative Creamery and cave-aged to perfection in our Cellars. 2006 ACS Best in Show Winner.
- Moses Sleeper Cheese Wheel (8 oz.) – This soft bloomy rind, or brie-style cheese is buttery and approachable. The downy-white edible rind is mild and faintly earthy while the creamy interior tastes of garlic butter when fully ripe.
- Alpha Tolman Cheese Wedge (6 oz.) – This raw-milk Alpine-style cheese recalls classics like Gruyere or Appenzeller. With flavors of toasted nuts and cured meat, its firm smooth texture is satisfying on a charcuterie board but also great for melting in recipes or fondue.
- Withersbrook Blue Cheese Wedge (8 oz.) – A raw-milk blue steeped in Eden Ciders apple cider after cave-ripening; rich and creamy with fruity apple and winter spice flavor.

Jasper Hill Farm, the Greensboro, Vermont creamery behind Harbison, Willoughby, Bayley Hazen Blue, and the world-renowned Cabot Clothbound Cheddar, was built from scratch in 1998 when brothers Andy and Mateo Kehler bought a rundown 200-acre farm and turned it into one of America's most celebrated cheesemaking and cave-aging operations. Their 22,000-square-foot, seven-vaulted underground aging facility is among the finest in the country — the final stop for cheeses from six different artisan creameries.
