Jasper Hill Farm’s Charcuterie Board: dry-aged salami and thin savory slices from the creamery’s favorite local artisan, alongside three cheeses from the Greensboro, Vermont Cellars — the full board that proves the Northeast Kingdom makes world-class cured meat as well as world-class cave-aged cheese.
This package serves 18-20 people and includes
- Harbison Cheese Wheel (9 oz.) – A rich and flavorful bloomy-rind (brie-like) cheese wrapped in spruce bark. The decadent, spreadable texture is best enjoyed by slicing off the top and going in with a spoon.
2018 ACS Best in Show Winner. - Cabot Clothbound Cheddar Cheese Wedge (12 oz.) – A new American classic—this traditional style cheddar is savory and bright with a sturdy, crystalline texture and a caramelized finish. Made by our neighbors at Cabot Cooperative Creamery and cave-aged to perfection in our Cellars. 2006 ACS Best in Show Winner.
- Whitney Cheese Wedge (12 oz.) – A raw milk raclette-style cheese made from our own herd. An ideal melter with buttery, smooth flavors and a peachy washed rind that lends a gentle, aromatic funk. 2022 ACS Best in Show Winner.
- Birdy’s Smooth Whole Grain Mustard (2 oz.) – Small-batch mustard made in New England, inspired by the French dijon style.
- Brewer’s Pretzels (5 oz.) – Artfully crafted with upcycled grains, these crunchy, flavorful treats have classic pretzel flavors with a delicate texture–perfect for scooping up Harbison.
- Vermont Salumi Lonza (2.5 oz.) – Lonza is lean, herbed pork loin aged for several months for delicate complexity. Bright, clean, and herbaceous flavor pairs beautifully with cheese. Made by a Vermonter with Italian roots.
- Vermont Salumi Red Wine & Garlic Salami – A classic combination of pork, with cracked pepper, garlic, and red Wine. This salami is balanced, flavorful, and pairs well with hard cheeses, sandwiches, pizzas, and more.

- Boxes ships with ice packs, may thaw in transit. Cheese may arrive at room temperature.
- Keep unopened small wheels in original wrapper. Store cut wedges or open wheels in airtight container. Enjoy-by dates are marked on individual packages.
- Meats arrive vacuum-sealed and are shelf-stable. Store in the refrigerator for up to 6 months for best quality.

Jasper Hill Farm, the Greensboro, Vermont creamery behind Harbison, Willoughby, Bayley Hazen Blue, and the world-renowned Cabot Clothbound Cheddar, was built from scratch in 1998 when brothers Andy and Mateo Kehler bought a rundown 200-acre farm and turned it into one of America's most celebrated cheesemaking and cave-aging operations. Their 22,000-square-foot, seven-vaulted underground aging facility is among the finest in the country — the final stop for cheeses from six different artisan creameries.
