Harbison

Harbison from Jasper Hill Farm: pasteurized cow’s milk wrapped in spruce bark, bloomy rind, spreadable — best served by slicing off the top and spooning directly from the rind. Brothers Andy and Mateo Kehler make this at their Greensboro, Vermont creamery as part of their affineur program, using milk from neighboring Northeast Kingdom farms. Rich, woodsy, creamy, deeply Vermont.

World-Renowned Farmstead Cheeses from Vermont

Jasper Hill Farm, the Greensboro, Vermont creamery behind Harbison, Willoughby, Bayley Hazen Blue, and the world-renowned Cabot Clothbound Cheddar, was built from scratch in 1998 when brothers Andy and Mateo Kehler bought a rundown 200-acre farm and turned it into one of America's most celebrated cheesemaking and cave-aging operations. Their 22,000-square-foot, seven-vaulted underground aging facility is among the finest in the country — the final stop for cheeses from six different artisan creameries.

Multiple Gold Medal winners at the World Cheese Awards and International Cheese Awards, Jasper Hill is a national benchmark for American farmstead cheese — shipped nationwide on Goldbelly.
