Jasper Hill Farm, the Greensboro, Vermont creamery behind Harbison, Willoughby, Bayley Hazen Blue, and the world-renowned Cabot Clothbound Cheddar, was built from scratch in 1998 when brothers Andy and Mateo Kehler bought a rundown 200-acre farm and turned it into one of America's most celebrated cheesemaking and cave-aging operations.
