Bayley Hazen Blue from Jasper Hill Farm — the raw-milk blue that started it all. Brothers Andy and Mateo Kehler have been making this flagship cheese at their Greensboro, Vermont creamery since 2003: densely creamy with bold but balanced flavors, cultured cream laced with anise and grassy notes, a handsome natural rind. Served at the White House state dinner for French President François Hollande in 2014; still made by hand from the same Ayrshire herd milk in the same Northeast Kingdom farmhouse creamery.
