Jaarsma Bakery, the Pella, Iowa institution behind Dutch Letters, speculaas cookies, and butter danishes made from recipes unchanged in over 125 years, has been the anchor of America's most authentically Dutch small town since 1898. Founded by Harmon Jaarsma and now in its fifth generation under great-great-granddaughter Lisa and her husband Carl, the bakery still produces its S-shaped Dutch Letters — originally a Sinterklaas Day specialty, now a year-round staple — exactly as it always has.
