Wild Spot Prawn Tails
Some Prep
Wild Spot Prawns are a highly seasonal West Coast delicacy with a beautifully delicate, almost buttery texture with a sweet flavor that’s so, so crave-able.
Tasting notes: Beautiful, delicate, almost buttery texture. With a lovely sweet and succulent flavor.
How they’re fished: They’re caught using oval traps, then hand-sorted to release bycatch and female prawns back into the water. After sorting, they’re stored in oxygen-enriched seawater to maintain freshness before being flash frozen.
Where they’re grown: These Spot Prawns come from the pristine waters of Barkley Sound in British Columbia, harvested by our friend Mica Verbrugge at Canadian Seafood Inc.

Tomales Bay's Legendary Oyster Company
Tomales Bay's Legendary Oyster Company
Hog Island Oyster Co., the Tomales Bay, California aquaculture pioneer behind sustainably farmed oysters harvested from some of the coldest, cleanest water on the West Coast, has been growing some of the country's most celebrated shellfish for over 40 years. Sweet, briny, and clean-tasting — the product of careful aquaculture, ideal conditions, and a family-run operation that has never taken shortcuts.
A James Beard Foundation Media Award nominee for their cookbook and a farm featured in National Geographic and the San Francisco Chronicle — Hog Island oysters are shipped nationwide on Goldbelly.
