Hog Island Oyster Co.’s Red Abalone — 2 pack: a true California native, enjoyed for centuries along the Northern California coast and one of the most prized shellfish in the Pacific — from the seafood company John Finger and Michael Watchorn founded on Tomales Bay in 1983. Sustainably farmed; the abalone from the people who understand California shellfish better than anyone.

This packages serves 1-2 people and includes 2 Red Abalone

  • Each abalone weighs approx. 4 oz.
  • Choose to add on more!

Add On Options Include

  • Chipotle Bourbon Butter (8 oz.)
  • Live abalone ship cold and should be cooked or shucked and cleaned the day you receive them.
  • Keep live abalone cool and moist until ready to prepare.
  • Abalone should not smell. If they are stinky, the meat is off-white, or the foot has curled up, the animal may have died — do not eat it.
  • Once cooked and shucked, meat can be refrigerated for up to 4-5 days or frozen for up to 3 months.

To Serve

  • To eat raw or fried: Hold the abalone shell side down. Run a dull knife underneath the meat around the edge to remove it from the shell. With a paring knife, cut off the gut ball on the underside of the meat and discard. The meat is now ready to use.
  • To grill: Place the shell directly on the grill to cook and remove the guts before eating.
