Hog Island Sweetwaters - Extra Small

Hog Island Oyster Co.’s Sweetwaters — Extra Small: the original Tomales Bay Pacific oyster in the smallest, most approachable size — from the farm John Finger and Michael Watchorn founded in 1983. Plump meat, deep-cupped shell, rich sweet liquor. Every Sweetwater purified post-harvest in UV-sterilized saltwater. The extra small for the table that wants to eat more of them.

This packages includes your choice of Hog Island Extra Small Sweetwater Oysters

  • Each oyster measures approx. 2-2.75" in length

  • Hogwash Mignonette
    • 2 oz. jar of vinegar mixture
    • 2 oz. jar dry ingredients
  • Hot Sauce (5 oz.)
  • Oyster Shucking Bundle
    • 1 Branded Oyster Shucking Knife made by R. Murphy
      • Stainless blade (2-1/2″ × 5/8") with a blue 100% recycled plastic handle
    • 1 pair of Oyster Shucking Gloves (one size fits most)

Lime not included

  • Oysters ship fresh with ice packs.
  • Upon arrival, immediately remove oysters from the bag and place in a colander. Set colander inside of a bowl to drain well.
  • Cover oysters with a clean, damp kitchen towel. Do not submerge in fresh or salt water.
  • Place in the refrigerator and keep cold at 34-40°F. Note: Oysters may open slightly to breathe — this is normal and means they are healthy.
  • Discard any oysters with broken shells or that do not close tightly when tapped.
  • Best enjoyed within 3-4 days of delivery.

To Serve

  • Oysters are ready to shuck and eat!
  • Serve on a platter of ice to keep them cold while enjoying.
  • Enjoy naked or with a squeeze of lemon, a splash of hot sauce, or a touch of Hogwash Mignonette.

Hogwash Mignonette

  • Keep jars refrigerated until ready to use.
  • Combine ingredients of both jars, plus the juice of 1 lime (not included), in a bowl just before serving.

  • Store in a cool, dry place until ready to use.
