America’s oldest line of heritage turkeys — 100% pasture-raised and antibiotic-free — comes from Frank Reese’s Good Shepherd Poultry Ranch, the only remaining commercial Standardbred poultry hatchery in the U.S. For 24 years, Heritage Foods has partnered with Reese to preserve and distribute these historic turkey breeds, whose genetics date back to the 1830s.
Raised on pasture and fed a vegetarian diet, these naturally mating birds represent the foundation of America’s agricultural and culinary heritage. Heritage Foods raises eight Standardbred varieties — Bronze, Narragansett, Bourbon Red, White Holland, Black, Slate, Beltsville Small White, and Royal Palm — each with its own unique flavor.
Through new hatcheries and farmer networks, Heritage Foods is helping conserve these rare genetic lines. Now, as Frank Reese passes on his expertise to apprentice Jed Greenberg, the tradition continues. Size Options Include

Certification by the American Poultry Association is the only label that matters when it comes to “heritage” poultry. Frank Reese is the first and one of the only farmers to receive certification by the APA for his birds as purebreds, standards that they set in 1873.
- Turkey ships fresh with ice packs, may thaw in transit.
- Upon arrival, store turkey in the refrigerator for up to 7 days or, if preferred, store turkey in the freezer for up to 6 months.
To Serve
- To allow the turkey to come to temperature prior to cooking, take the turkey out of the refrigerator 1 hour before cooking.
- Preheat oven to 325°F. While the oven preheats, remove neck and giblets from the cavity and rub turkey with olive oil or butter, season with salt, pepper, and your favorite herbs like rosemary and thyme.
- Cook to an internal temperature of 155°F, remembering that the temperature will continue to rise after leaving the oven.
- Calculate around 8-12 minutes per pound depending on the size of the bird in a 325°F oven. Smaller birds (up to 14 lb) typically need 8-10 minutes per pound. Larger birds may need 10-12 minutes per pound. Ovens differ, so check the internal temperature often.
- After the cooking process is complete, allow the turkey to sit on the counter for around 20 minutes before carving.
