Their Heart’s Desire Collection is crafted to bring loved ones together to celebration of flavor, comfort and connection. The centerpiece of this collection is a limited-release, triple cream, bloomy rind Heart’s Desire—a heart-shaped organic cheese inspired by the tranquil swimming spot on Tomales Bay that shares its name. Made from their beloved Mt Tam recipe and created especially for Valentine’s Day, it offers a luscious, creamy texture and a delicate, buttery flavor that will make any occasion feel extraordinary. This beautiful collection is made complete with Rustic Bakery Tart Cherry, Cacao Nib, & Almond Crisps, a raspberry rose preserve and Marcona almonds.

In 1997, they started with a dream shared between two college friends and business partners, Sue Conley and Peggy Smith: To celebrate organic practices and spotlight the craftsmanship of local sustainable agriculture in Marin and Sonoma counties. Today, they’re proud to be an icon in the industry, carrying the torch of the food revolution that started in their backyard. Organic. Farm-to-Table. Delicious, award-winning cheese. It’s in their DNA. And it defines their famous creations, including the beloved triple cream Mt Tam.

This package serves 2-4 people and includes

  • Heart’s Desire (8 oz.) – Heart’s Desire is a limited heart-shaped organic triple cream, made from Cowgirl Creamery’s beloved Mt Tam recipe. It is produced with organic, locally-sourced milk and rises above the standard for bloomy rind cheeses. It takes you from fudgy firmness to buttery softness with flavors spanning from bright crème fraiche to complex and mushroomy, evoking the North Bay’s lush green and gold pastures.
  • Chocolate Cacao Nib Shortbread – Buttery shortbread with a medley of cacao nibs and cocoa and sea salt.
  • Mitica Marcona Almonds (4 oz.) – These blanched Spanish almonds are carefully roasted and lightly finished with sea salt, creating a luxurious bite that is naturally sweet, while being delicate in flavor and texture.
  • Raspberry Rose Preserve (1.5 oz.) – Quince and Apple’s Raspberry Rose is made with ruby red raspberries that sparkle in this bright conserve.
  • Cheeses ship with gel packs, gel packs may thaw in transit.
  • Expect cheese to arrive at room temperature.
  • Upon arrival please refrigerate.
  • For optimum enjoyment, please enjoy your cheese within 1-2 weeks. Soft cheeses should be enjoyed sooner.

To Serve

  • Remove your cheese from the refrigerator at least an hour before serving, unwrap it, and place it on a cheese board or butcher paper.
  • Cover with an inverted bowl. This allows the cheese to breathe and protect it while it comes to room temperature.

There is Mold on My Cheese!

  • Traditional cheeses are often made with natural rinds that display a variety of colorful molds and bumpy textures. These rinds protect the cheese as it ages while contributing to its unique flavor profile.
  • Bacteria and mold are essential components of cheese. When cut and wrapped, molds and surface oils can develop on the face of the cheese. Simply scrape the surface with a knife to remove before serving.
