Olympia Provisions ships its famous Italian charcuterie nationwide on Goldbelly! Olympia Provisions makes 3 Spanish-style chorizos inspired by the regions of Andalucia, Navarre, and Rioja. This sampler allows you to take a culinary journey of Spain.

Founded by Elias Cairo in 2009, Olympia Provisions in Portland, Oregon, has taken the wonderful French concept of charcuterie and elevated it into an art form. Salumist Elias Cairo grew up with a father who made charcuterie at home and now Olympia Provisions, Oregon’s first USDA-approved salumeria, crafts a variety of salumi from all natural Northwest pork using old world techniques that have all but gone extinct.

This Spanish Sampler package comes with 4 Salamis.

  • Each salami is approximately 4.5 ounces.

Flavors Include:

  • Chorizo Rioja a Spanish-style salami with both sweet & smoked paprika, garlic & oregano.
  • Chorizo Navarre flavored with sweet paprika, garlic & cayenne.
  • Chorizo Andalucia flavored with paprika, garlic & clove.
  • Salchichon a Spanish-style festival salami with cinnamon, clove, nutmeg, black pepper, garlic & paprika.


Chorizo Rioja – Pork, Pork Fat, Spices, Salt, Less Than 2% Of: Garlic, Water, Dextrose, Swiss Chard Powder, Oregano, Lactic Acid Starter Culture. Hog Casing.
Chorizo Andalucia – Pork, Pork Fat, Spices, Salt, Less Than 2% Garlic, Dextrose, Water, Swiss Chard Powder, Lactic Acid Starter Culture. Hog Casing.
Chorizo Navarre – Pork, Pork Fat, Spices, Salt, Less Than 2% Garlic, Dextrose, Water, Swiss Chard Powder, Lactic Acid Starter Culture. Hog Casing.
Salchichon – Pork, Lard, Pork Liver, Water, Pistachio, Milk, Bread (Flour, Water, Salt, Yeast), Less Than 2%: Salt, Onion, Port, Shallot, Cultured Dextrose, Dried Vinegar, Spices, Garlic, Parsley, Swiss Chard Powder, Sugar, Natural Flavors, Thyme, Lactic Acid Culture.

Instructions / Storage

  • Salami arrives ready to serve
  • Salami is shelf-stable and can be kept at room temperature. For best results, wrap salami in butcher paper and store it in the fridge
  • We do not recommend freezing salami or placing it in a plastic container. It needs to breathe!

Note: Some salamis may be coated in a thin layer of white mold. This is a good thing! It’s added during the curing process to protect the salami from unsafe mold growth, to keep the salami from drying out, and to help mellow out the salami’s flavor. You’re welcome to remove the casing, but it’s completely safe to eat.
