Gambino's Cream Cheese Filled King Cake
Gambino’s has been baking the New Orleans king cake since Joe Gambino opened his bakery in 1949 — the oval brioche ring decorated in the Mardi Gras colors of purple (justice), green (faith), and gold (power), with a plastic baby hidden inside. This version is filled with cream cheese: tangy, rich, and folded into the sweet cinnamon dough before the fondant icing and colored sugars go on. The king cake that David Letterman and Oprah Winfrey have both ordered for decades.
