Southside Market’s all-natural smoked chicken is a great option for those wanting something other than beef or pork that still captures the authenticity of Central Texas BBQ. Southside Smoked Chicken is moist and succulent with a smoky flavor, golden color, and visible grill marks from the pit. Each chicken is halved before going on the pit. Choose between 4 or 8 chicken halves.

Back in 1882, when the first cuts of meat were sold from Southside Market’s founder William Moon’s wagon, his mantra was “Butcher today, deliver tomorrow.” Without refrigeration, the unsold fresh cuts of meat were preserved by smoking and spiced to make sausages. It wasn’t long before these “hot guts” became famous, with people all over coming to Elgin, Texas, to sample their smoked sausages. While Southside Market’s owners have changed in the past 135 years, their dedication to crafting the best sausages in Texas has not, which is why nearly a century and a half since that first cut of meat was sold, Elgin is known as the Sausage Capital of Texas.

This package includes your choice of 4 or 8 Smoked Chicken Halves

  • Each half serves 1-2 people and weighs approx. 1.25 -1.5 lbs.
  • Chicken ships fully cooked & vacuum-sealed with ice packs, may thaw during transit.
  • Upon arrival, store in the refrigerator or freezer.
  • Chicken can be stored in the refrigerator for up to 4 days or in the freezer for up to 6 months.

To Serve

Grill

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat grill to 300° F.
  • Wrap in foil and place on grill over indirect heat for 45 minutes or until internal temperature reaches 165°F.

Oven

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat oven to 350° F.
  • Wrap in foil and place in the oven for 45 minutes or until internal temperature reaches 165°F.
