Ultimate Salmon & Caviar (Serves 8-10)
- 250 g tin of: American Transmontanus or Siberian Baerii Caviar
- 1 lb. Scottish Smoked Salmon
- 1 lb. Plain Cream Cheese
- 2 packages of Blini (72 pieces)
- 8 oz. Crème Fraiche
- 1 package of Mini Toasts
- 3 oz. jar of Capers
Note: All Russ & Daughters fish are deboned. We do our best, but we do warn you that the odd bone sneaks through.

- Transmontanus or Siberian Baerii Caviar Caviar should be kept refrigerated until five minutes before serving. Keep the tin closed and in the coolest part of your refrigerator, away from the light. Do not open it at all until just before serving. If stored in this way, caviar will stay in the average refrigerator for approximately two weeks. Once opened, caviar should be eaten and enjoyed immediately. Caviar should never be frozen.
- All Russ and Daughters fish will stay fresh for 7-10 days after the time of purchase or delivery. Keep refrigerated. Though ideally consumed fresh, smoked salmon can be frozen if tightly wrapped when you receive it. Thaw in the refrigerator overnight.
- Due to the artisanal nature of our products, and the fact that they are not loaded with gums and preservatives (as is the norm with supermarket brands), our cream cheese will keep fresh for approximately one week in refrigeration. We do not recommend freezing cream cheese.
- Store crème fraîche in the refrigerator. Typically, crème fraîche will keep for up to eight weeks, if refrigerated. If separation occurs, gently stir the liquid back into the crème fraîche.
To Serve
- Avoid using metallic utensils entirely as they can interfere with the natural essence of caviar. For an unadulterated experience, choose utensils and bowls made from non-reactive materials such as mother of pearl, glass, plastic, or wood.
- Great caviar can be enjoyed simply on its own. If you would like to serve the caviar with an accompaniment, spread a light coat of crème fraîche on a blini, toast point, quail egg, or baby potato, and then crown it with caviar. Gently lift the caviar from the tin using a non-metallic spoon, not a fork or knife. Be careful not to break the pearls.

This landmark shop started with an Eastern European immigrant selling food to support his family and save up for a pushcart… which turned into a horse & wagon… which eventually turned into a widely acclaimed appetizing shop recognized for its contributions to the historical landscape of New York's Lower East Side.
When Joel Russ opened his shop in 1914, countless New York shops specialized in “appetizing,” best defined as foods that go with bagels. Russ passed the shop on to his daughters in the 1930s, and today it’s run by fourth-generation owners Josh Russ Tupper and Niki Russ Federman. Russ & Daughters is one of the last of its kind, providing tastes and traditions from the Old World out of the same old tenement building on Houston Street.
In the United States, less than one percent of family businesses survive long enough to enter the fourth generation, but Russ & Daughters has bucked the trend. It's a true taste of old New York.
