- Kit ships with ice packs, may thaw during transit.
- Upon arrival, store the kit in the refrigerator for up to 2-3 days.
- Fresh lobster meat should be kept refrigerated in the coldest part of your fridge (32°F–34°F), in an airtight container or vacuum-sealed bag for best quality.
- Do not freeze fresh lobster meat, as it may affect texture and flavor.
- Potato chips can be stored at room temperature.
To Store
- Gently remove the cooked lobster meat from its packaging.
- Using a knife or your hands, roughly chop the claw and knuckle meat into bite-sized pieces.
- Place the chopped lobster in a medium-sized bowl.
- Add mayonnaise to the bowl with the lobster meat.
- Start with a small amount and gradually add more until you reach your desired consistency. Be careful not to use too much, as you want the natural sweetness of the lobster to shine through.
- Add Optional Flavors: If desired, gently fold in finely chopped celery for crunch, a squeeze of fresh lemon juice for brightness, or a pinch of black pepper for a touch of warmth. Ingredents not included.
- Lightly butter the sides of your split-top buns.
- In a skillet over medium heat, toast the buns until golden brown and warm.
- Once buns are toasted, generously spoon the prepared lobster salad into the warm buns.
- Serve immediately with kettle potato chips.

Day boat scallops are harvested by small dredge and shucked on deck by hand, sweet and briny clams are harvested daily from Wellfleet Harbor, fresh lobsters are caught in Cape Cod waters and shipped live daily, and oysters are raised from seed, sustainably farmed inside Wellfleet Harbor.
