We Dry-Cure our Angus Beef Briskets for 7 days with a traditional brine of salt, brown sugar, bay leaves, pink salt, clove, garlic, coriander, black pepper and a few other secret herbs. After a week of cure, we apply a generous coating of Pepper and Coriander and then, after a nite in the fridge, we smoke the briskets for 12 hours over oak, yielding an incredibly flavorful rich and unctuous meat.

Their curing and smoking process observes the strictest guidelines set by the USDA and is highlighted by a commitment to not add preservatives, artificial coloring, liquid smoke, or sugar.

- Smoked Meat ships frozen with ice packs, may thaw during transit.
- Upon arrival, Store in refrigerator for up to 6 days or in freezer for up to 21 days.
