Perhaps no New Orleans restaurant is more closely associated with the Civil Rights Movement than Dooky Chase’s, which first opened its doors in the Treme neighborhood in 1941. Through the vision of chef & owner Leah Chase, it grew into one of the first African American fine dining restaurants in the country and a central meeting place for music and entertainment, civil rights, and African-American culture, hosting everyone from Martin Luther King, Jr. to Duke Ellington to Barack Obama. Chef Leah received the Lifetime Achievement Award from the James Beard Foundation in 2016, and today Dooky Chase’s remains family owned and operated, a true New Orleans landmark and one of the city’s premier restaurants for authentic Creole cuisine. This jambalaya is one of Chef Leah’s signature recipes, kicked up with two varieties of Cajun sausage and bursting with flavor.
Kits ship February 3-6 only to arrive by game day.

- This Creole Sausage Jambalaya arrives fully cooked and ships with ice packs, which may thaw in transit. Store in the freezer for up to 6 months.
- Your Haydel’s king cake & frosting can be stored in the refrigerator for up to 7 days.
- The green, purple, and yellow sugars are the traditional colors of Mardi Gras! You can keep these, and the icing, at room temperature until ready to assemble your cake.
- Olive Salad and Hurricane Drink Mix can be stored at room temperature until opened.
- Once opened, Olive Salad can be stored in the refrigerator for up to 12 months and Hurricane Drink Mix can be stored in the refrigerator for up to 2 weeks.
- Pralines may be stored at room temperature for up to 1 month.
To Serve
Jambalaya Stovetop Instructions (From Frozen)
- Defrost the unopened bag of jambalaya in the sink, in a bowl of cold water, until it’s completely softened.
- Open the bag and spoon it into a sauce pot on medium heat.
- Stir often, so that it doesn’t stick to the bottom of the pot. Cook until completely heated through.
- Serve and enjoy a taste of Dooky Chase at home.
Jambalaya Microwave Instructions (From Frozen)
- Defrost the unopened bags of jambalaya in the sink, in a bowl of cold water, until it’s completely softened.
- Open the bags and spoon it into a large microwave-safe bowl. Cover with plastic wrap.
- Heat in the microwave on high for 2 minutes. Stir and place back in the microwave for 2 additional minutes, or until completely heated through.
- Serve and enjoy a taste of Dooky Chase at home.
King Cake
This king cake isn’t just a dessert – enjoy it any time of day as breakfast, a snack, or coffee cake!
- Remove the king cake and frosting from the refrigerator and leave them at room temperature for 3 hours prior to serving.
- Give the icing a stir and spread it evenly across top of the cake.
- Sprinkle the colored sugars in stripes across top of the cake. Be sure to do this quickly, before the icing sets.
- That’s it! Now slice the cake and see who finds the baby!
Beignet Mix
- Mix in bowl 2 cups mix and 7 fl. oz. water. Stir with spoon until blended.
- Roll to 1/8" thickness on floured surface, using flour liberally on dough.
- Cut into 2 1/4" squares. Makes about 2 dozen.
- Fry 1-2" of oil at 370° F basting continually on each side until puffy and light golden. Drain well. (Oil should be hot enough for dough to pop to surface in 8-10 seconds.)
- Sprinkle generously with powdered sugar and enjoy!
Olive Salad
- Olive Salad is ready to enjoy right out of the jar! Or add cream cheese & sour cream to serve with your favorite chips.
Hurricane Drink Mix
- Get a glass that holds 28 oz.
- Add 4 oz. of Hurricane Rum or a good Amber/Gold Rum.
- Add 4 oz. of Hurricane Mix.
- Fill with crushed ice.
- Garnish with an orange and cherry.
- Enjoy!
