T-Rex Cookie Company founder Tina Rexing left her job in corporate America to open her Minneapolis, Minnesota cookie company in 2015. While she may have spent every day sitting in an office, much of those two decades was spent competing at the Minnesota State fair with her baked goods, refining her recipes each time. T-Rex Cookie Company’s cookies are a half-pound each and the same size as a dinner plate, which means there is plenty to share…or not. We won’t judge.
