A mildly spicy cheese with Southwestern flavors of Hatch chiles, New Mexican chiles, smoked Spanish paprika, and Mexican oregano. This pasteurized cow’s milk cheese has a semi-firm texture and a colorful exterior and paste. It melts perfectly on weeknight tacos, but also holds its own on a cheeseboard. Launched in 2024, it’s already a Bronze medalist at the 2025 World Cheese Awards; it’s a spiced cheese that earns a place alongside the traditional wheels rather than playing novelty. Perfect for a queso worth making from scratch, a burger that needs a lift, or the friend who puts hot sauce on everything.

  • Once the cheeses have been opened, please consume within 7 days and store them in the refrigerator.

To Serve

  • Remove cheese from the refrigerator 30–45 minutes before serving to allow it to come to room temperature for best flavor.
  • Slice and serve on a board, or shred onto tacos, nachos, or queso.
  • Layer into a grilled cheese or burger for a melty finish.

The South’s Most Honored Artisan Cheese

Out of Thomasville, Georgia, Sweet Grass Dairy makes some of the most decorated artisan cheese in the American South, led by Green Hill, a luscious double-cream with a soft bloomy rind that has become the creamery's calling card. Jessica Little grew up on a dairy, learning from her mother who helped pioneer artisan cheesemaking in the Southeast; she and her husband Jeremy have spent over two decades building on that foundation, earning more than 75 national and international honors from the American Cheese Society, the World Cheese Awards, and the Good Food Awards.

The range runs from Thomasville Tomme, aged 60 to 90 days in the style of a Pyrenees tomme, nutty and smooth, to Asher Blue, creamy enough to convert skeptics, to Georgia Gouda, a 2024 release that swept the major competitions in its first year. Sweet Grass Dairy's Southern cheese is shipped nationwide on Goldbelly, proof that the South belongs on any cheese board.
