Griffin Wedge
Ready To Eat
To make Griffin, Sweet Grass Dairy soaks an entire keg of Terminus Porter from Gate City Brewing into the curds of its Thomasville Tomme recipe, then names the wheel for Jeremy and Jessica Little’s third son. Aged roughly 120 days until firm and slightly crumbly, it carries the malty, hoppy depth of the porter through a savory, umami-rich paste with a sharper, more complex finish than its Tomme cousin — bold enough to anchor a board, versatile enough to shave over pasta or melt into a gratin. A two-time World Cheese Awards Gold medalist and two-time Good Food Award winner, it’s the most decorated beer-washed cheese made in the American South. Perfect for a beer lover’s gift, a bold end to a cheese course, or a pour of the porter that made it.

A Southern creamery with a national reputation — and the hardware to prove it.
The South’s Most Honored Artisan Cheese
Out of Thomasville, Georgia, Sweet Grass Dairy makes some of the most decorated artisan cheese in the American South, led by Green Hill, a luscious double-cream with a soft bloomy rind that has become the creamery's calling card. Jessica Little grew up on a dairy, learning from a mother who helped pioneer artisan cheesemaking in the Southeast; she and her husband Jeremy have spent two decades building on that foundation, earning more than 50 national and international honors from the American Cheese Society, the World Cheese Awards, and the Good Food Awards.
The range runs from Thomasville Tomme, aged 60 to 90 days in the style of a Pyrenees tomme, nutty and smooth, to Asher Blue, creamy enough to convert skeptics, to Georgia Gouda, a 2023 release that swept the major competitions in its first year. Sweet Grass Dairy's Southern cheese is shipped nationwide on Goldbelly, proof the South belongs on any cheese board.
