St-Viateur Bagel has been hand-rolling sesame bagels in Montreal’s Mile End since Myer Lewkowicz — a Buchenwald survivor turned bagel baker — opened his shop on St-Viateur West in 1957, and the recipe hasn’t changed once. Each bagel goes honey-water boiled, sesame-coated, then into the wood-fired oven until the crust cracks golden and the inside pulls dense and just sweet enough — a texture and flavor profile that has no true equivalent outside Montreal. The New York Times called them “Bagels like none other,” and the line outside the door at 3 a.m. makes the same argument.

- To store frozen, slice in half, and then freeze in an airtight freezer-safe plastic bag for up to two months.
