It’s a matter of pride for a BBQ joint to do all three well and those that are passionate about Texas BBQ believe this trinity to be the best way to truly experience Texas BBQ at its finest. This will make you a believer. With this gift set, you get two packages of our Original Beef Sausage, a half portion of slow-smoked premium Brisket, and a half rack of St. Louis Cut Pork Ribs.

Back in 1882, when the first cuts of meat were sold from Southside Market’s founder William Moon’s wagon, his mantra was “Butcher today, deliver tomorrow.” Without refrigeration, the unsold fresh cuts of meat were preserved by smoking and spiced to make sausages. It wasn’t long before these “hot guts” became famous, with people all over coming to Elgin, Texas, to sample their smoked sausages. While Southside Market’s owners have changed in the past 135 years, their dedication to crafting the best sausages in Texas has not, which is why nearly a century and a half since that first cut of meat was sold, Elgin is known as the Sausage Capital of Texas.

Each Texas Trinity Gift Set serves 8-10 people and includes

  • 2 packs of Original Beef Sausage (4 links in each pack)
  • 1 Half Moist Brisket (approx. 3-4 lbs.)
  • 1 Full Rack St. Louis Cut Pork Ribs
  • Meats ships fully cooked & vacuum-sealed with ice packs, may thaw during transit.
  • Upon arrival, store in the refrigerator or freezer.
  • Meats can be stored in the refrigerator for up to 4 days or in the freezer for up to 6 months.

To Serve

Sausage – Grill

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat grill to 325° F.
  • Grill for 15 minutes.
  • Turn over and continue heating for an additional 10 minutes, or until internal temperature is 165°F.
  • Serve and enjoy!

Sausage – Oven

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat oven to 325° F.
  • Bake for 20 minutes.
  • Turn over and continue heating for an additional 10 minutes, or until internal temperature is 165°F.
  • Serve and enjoy!

Brisket – Grill

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat grill to 300° F.
  • Wrap in foil and place on grill over indirect heat for 15 minutes for each 1/2 lb. of meat, or until internal temperature reaches 165°F.
  • Serve and enjoy!

Brisket – Oven

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat oven to 350° F.
  • Wrap in foil and place in the oven for 15 minutes for each 1/2 lb. of meat, or until internal temperature reaches 165°F.
  • Serve and enjoy!

Ribs – Grill

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat grill to 300° F.
  • Wrap in foil and place on grill over indirect heat for 45 minutes or until internal temperature reaches 165°F.

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat oven to 350° F.
  • Wrap in foil and place in the oven for 45 minutes or until internal temperature reaches 165°F.
