This Southside Market Jalapeno Cheddar sausage is great for sausage wraps, breakfast burritos, and more. Add it to any dish for that extra Texas kick!

Back in 1882, when the first cuts of meat were sold from Southside Market’s founder William Moon’s wagon, his mantra was “Butcher today, deliver tomorrow.” Without refrigeration, the unsold fresh cuts of meat were preserved by smoking and spiced to make sausages. It wasn’t long before these “hot guts” became famous, with people all over coming to Elgin, Texas, to sample their smoked sausages. While Southside Market’s owners have changed in the past 135 years, their dedication to crafting the best sausages in Texas has not, which is why nearly a century and a half since that first cut of meat was sold, Elgin is known as the Sausage Capital of Texas.

This package includes your choice of 6 or 12 packs of Jalapeño Cheddar Smoked Sausage

  • Each pack serves 2-4 people and includes 4 sausage links
  • Sausage ships fully cooked & vacuum-sealed with ice packs, may thaw during transit.
  • Upon arrival, store in the refrigerator or freezer.
  • Sausage can be stored in the refrigerator for up to 4 days or in the freezer for up to 6 months.

To Serve

Smoked

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Create a wood fire in a BBQ pit.
  • Maintain a cooking temperature of 200-250°F, and turn the sausage several times to ensure even smoking.
  • Heat sausages for 30–45 minutes, turning once halfway through. Cook until the internal temperature reaches 165°F.
  • Serve and enjoy!

Grilled

  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Preheat grill to 300° – 350° F.
  • Grill sausages for 15-20 minutes, turning once halfway through. Cook until the internal temperature reaches 165°F.
  • Serve and enjoy!
Sauteé
  • If frozen, thaw in the refrigerator overnight or until fully defrosted.
  • Heat sausage links with 2 tablespoons of oil in a skillet over medium heat.
  • Grill sausages for 15-20 minutes, turning several times to ensure even cooking. Cook until the internal temperature reaches 165°F.
