Sky’s Gourmet Tacos is a Los Angeles institution, and its founder, Barbara Jean “Sky” Burrell, is an undeniable legend. She was the first African American hired by the Kroger’s supermarket chain, oversaw a staff of 200 at United Way, was on the board of The Watts Labor Action Committee, and was part of the team that introduced the first drive-thru for McDonald’s. But after all that, Sky decided to embrace her passion for food, and turned her attention to infusing the humble taco with a dose of Southern soul. Sky Taco was the result, and when it opened in 1992 it proved to be an overnight smash hit. Burrell has since opened a catering business and a gourmet market place, and has been showered with countless awards and accolades including a plaque from LA Mayor Eric Garcetti. But these are the tacos that started it all!

This package serves 4 people and includes everything you need to make 4 “Wet” Burritos

  • 4 Pre-cooked and seasoned Burrito Fillings
    • Chicken (8 oz.)
    • Carnitas (8 oz.)
    • Shrimp (8 oz.)
    • Steak (8 oz.)
  • 4 Tortillas (8")
  • Chopped Cabbage/Cilantro Mix (8 oz.)
  • Grated Cheddar Cheese (4 oz.)
  • Chopped Tomatoes (4 oz.)
  • Sour Cream (2 oz.)
  • 2 pairs Gloves
  • 2 bottles “Wet” Sauce (each 16 oz.)
    • Green Salsa Verde “Wet” Sauce (V)
    • Red Mild Chili “Wet” Sauce
  • Choose to add Sky’s Original All-Purpose Seasoning (5 oz.) – Unique “Mexican, with a Splash of Soul” flavor in an all-purpose seasoning mix. Add the famous Sky’s flavor to all your recipes. A great addition to stews, stirred into simmering pork, or even mixed into salad dressings or dips!
  • Items ship frozen with ice packs, may thaw during transit.
  • Upon arrival, store items in the freezer or refrigerator.
  • Items last up to 2 days in the refrigerator.
  • FIllings last up to 2 weeks in the freezer.

To Serve

  • When it’s time to start preparing the Burritos, you can start by laying everything out on a kitchen counter. Only some of the packages require warming, the Main Fillings, the “Wet” Sauce, and the Tortillas. The other items you can put back in the refrigerator or leave at room temperature.

Tortillas (Microwave)

  • Before Microwaving the Tortillas, make a small puncture in the bag
  • Microwave for 10+ seconds until they are warm and flexible.

Tortillas (Stovetop)

  • Take the Tortillas out of their bag and remove the paper
  • Place them one at a time on a pan on medium heat – no oil needed.
  • Turn once or twice.
  • Once they are heated through and supple, remove them and place them on a warm plate.

Fillings (Microwave)

  • Microwave fillings one at a time.
  • Make a small toothpick size hole in the top of the bag (so the juices don’t run out)
  • Microwave for 20+ Seconds or until suitably warm.

Fillings (Stovetop)

  • In a pan on medium heat add a little butter or Vegetable oil
  • Pour contents of the Filling bag(s) into the pan.
  • Stir it frequently to be sure your fillings stay moist
  • They should be warm enough to eat in approx. 2-3 minutes or less. just don’t overcook the fillings – you’re just warming it.

Wet Sauce (Microwave)

  • To heat “Wet” sauce, microwave for 15-30 seconds with the top off.

Wet Sauce (Stovetop)

  • The good ‘ol frying pan. If you’re looking for something tried and true,
  • Pour “Wet” sauce into a large pan on the stove until hot.

Assemble

  • Place your warm tortilla on a flat, even surface (you can also use a cookie sheet if you want). Take 1/4 of the heated filling and place it in the middle third of a tortilla, in a row east to west within 1” from the edge on both sides.
  • You can add the other ingredients now (except the Sauce,) or put aside what you want on top for later.
  • Fold the Burrito and place seam-side down on a plate for serving.
  • Pour sauce over the Burrito (“Drench”). Use a full half of the bottle.
  • Serve and enjoy!

Sky's Gourmet Tacos was named Business of the Year by The National Black Enterprise Group and has been profiled in over 50 publications nationwide, most recently in The Los Angeles Times and the Hollywood Reporter. In 2017 Sky's founder and namesake was presented with a plaque by LA City Council President Herb Wesson and Los Angeles Mayor Eric Garcetti on the 25th anniversary of the original restaurant on Pico Blvd.
