Scottish Macaroon Shortbread Tray

The Scottish macaroon — coconut, sugar, sometimes chocolate — is one of Scotland’s most beloved sweets, and Chef Scottish Francis Legge, raised in the Highlands village of Kinloss and now running New York’s cult Shortbread Society ghost kitchen, has stacked it directly onto Granny Pearl’s buttery base. A thick, ooey-gooey layer of coconut folded with white chocolate and golden syrup crowns the shortbread — sweet, rich, and unapologetically Scottish — finished plain or with a milk chocolate drizzle. Zagat called Francis “the Banksy of Bakers”; this tray is his most Highland creation yet.

  • Shortbreads ship fresh with coolant, which may thaw during transit. During colder months, select varieties may not include coolant.
  • Though Shortbread is safe at room temperature for up to 1 week, it may also be refrigerated for up to 2 weeks or frozen for up to 3 months in an airtight/sealed container.
  • Shortbreads should be enjoyed at room temperature.
  • Should the Shortbread arrive above room temperature, allow it to reform in the refrigerator for an hour or two.
  • Do NOT cut cold; serve and slice only at room temperature.

To Serve

  • Shortbreads should be sliced at room temperature or very lightly chilled.
  • Make sure to bring your frozen shortbread back to room temperature prior to slicing and serving.
  • For easy slicing and serving we recommend removing your shortbread entirely from the tin.
  • To do so, first take a knife or an offset spatula to score around the edge of the tin to separate the shortbread and filling from the edges of the tin.
  • Then expand the corners of the tin and gently pop it out.
  • On a flat surface, while using a cutting board, use a sharp knife and slowly slice your shortbread. It can serve 8 regular slices and 16 bite-sized pieces.

The Queen’s Rose

  • Caffeine: Moderate
  • 1 tsp (2.5–3 g) tea per cup plus 1 extra for the pot
  • 205–212°F (96–100°C) water
  • Steep 3–4 minutes.
  • 3 minutes: delicate & floral. 4 minutes: fuller-bodied with deeper rose.
  • Steep longer and the tea may turn bitter.
  • Optionally: A spoonful of honey, or a splash of milk or cream can soften the rose and deepen the cup.
  • Enjoy!

The Highlander’s Hearth – Scottish Breakfast

  • Caffeine: High
  • 1 tsp (2–2.5 g) tea per cup plus 1 extra for the pot.
  • 205–212°F (96–100°C) water
  • Steep 3–5 minutes.
  • Optionally, add a splash of milk, a cube of brown sugar, or a wee dram of whisky, if you dare.
  • Enjoy!

Green Eyed Monarch

  • Caffeine: Moderate
  • 1 tsp (2–2.5 g) tea per cup + 1 extra for the pot
  • 175°F (80°C) water
  • Steep 2–3 minutes.
  • Optionally, add a twist of lemon or orange peel to brighten the citrus notes of the bergamot.
  • Enjoy!

The Smoking Earl

  • Caffeine: High
  • 1 tsp (2–2.5 g) tea per cup plus 1 extra for the pot.
  • 205–212°F (96–100°C) water
  • Steep 4 minutes.
  • Optionally, add a cube of brown sugar and a splash of milk or cream deepen the smoke and bergamot.
  • Enjoy!

  • Hand wash only. Not dishwasher safe.
  • Dry thoroughly after use to preserve the finish.
