Chef Shirley Chung’s Weekender Box features some of Ms. Chi’s fan favorites. It’s brimming with everything you need for a food-filled weekend, including tea-smoked duck from Sonoma’s famous Mary’s Farm with fluffy steamed lotus buns and a trio of house-made sauces, hand-made golden chicken jiaozi (dumplings) from the Los Angeles dumpling queen herself, and her signature vegan scallion pancakes. Prepare the feast and impress your friends and family in less than 45 minutes!

Every dish at Ms. Chi is inspired by traditional authentic Northern-style Chinese cuisine and made with the highest quality local fresh produce and spices. Opened by Chef Shirley Chung in 2018, the Los Angeles restaurant makes everything in-house, including their dumpling wrappers, sauces, and more. Every bite is an exuberant taste of the future of Chinese-American food. Shirley has been featured on the Food Network’s “Tournament of Champions,” was the runner up on “Top Chef” Season 14, and has been a featured chef at the James Beard House.

This package serves 4-6 people and includes

  • 1 Whole Tea Smoked Duck (approx. 3 lbs.)
    • 8 Lotus Buns (8 oz. Total)
    • 1 container Sliced Radish
    • 1 container Sliced Scallions
    • Plum Sauce (2 oz.)
    • Duck Sauce (2 oz.)
    • Chili Crisp (2 oz.)
  • 20 pcs. Chicken Jiaozi (2 lbs. Total)
    • 2 Dumpling Sauce (each 1 oz.)
    • 2 Chili Crisps (each 1 oz.)
  • 4 Scallion Pancakes (3 lbs. Total)
    • 2 Whipped Tofu Aioli (each 1 oz.)
    • 2 Chili Crisps (each 1 oz.)
    • 2 Duck Sauce (each 1 oz.)

  • Dumplings ship frozen with dry ice.
  • Dry ice may dissipate in transit.
  • Do not remove dry ice with bare hands.
  • Upon arrival, store items in the refrigerator or freezer.
  • Store duck, lotus buns, scallion pancakes, and sauce in the refrigerator for up to 1 week.
  • Store chicken jiaozi in the freezer for up to 6 months.
  • Duck may be cooked from a refrigerated state. If cooking from frozen, defrost in the fridge overnight.
  • Pancakes may be cooked from a refrigerated state. If cooking from frozen, defrost in the fridge for a few hours.

To Serve

  • Preheat oven to 400° F, if you have a convection oven, turn the fan on to get crispier skin.
  • Place duck breast side up on a roasting rack with a sheet pan, and roast the duck in the oven for 15 to 20 minutes, until internal temperature reaches 165° F.
  • The whole duck is ready, carve and serve.

Buns

  • You can steam these buns in a steamer, high heat for 6 minutes, they will become soft and fluffy.
  • Or you can put them on a microwave-safe plate, cover them with a damp paper towel, and microwave on it high for 20 seconds for 4 buns each time.

Assembly

  • Tea smoked duck is yummy on its own and includes a trio of sauces, our house-made.
    plum sauce, duck sauce, and chili oil crisps.
  • Spread the sauces on the bun, add scallion whites, and radish with slices of duck to make little duck bun sliders.
  • Serve and enjoy!

Chicken Jiaozi

  • Bring 6 Qts. of water to a boil in a large pot.
  • Place frozen dumplings into the pot and bring the water back to a simmer.
  • Turn down the heat to medium, maintain this temperature for cooking.
  • Simmer the dumplings for around 8 to 9 minutes, gently stirring the dumplings so they are cooking evenly.
  • Be sure to add a touch of cold water to calm down the water temperature when needed.
  • Strain and serve with vinegar sauce and chili oil.
  • Serve and enjoy!

Scallion Pancakes Oven

  • Preheat oven to 425° F.
  • Brush the scallion pancake with some cooking oil (canola, grape seed are the ones we use).
  • Place the pancakes on the oven rack directly.
  • Bake for 6 to 8 minutes, till hot and crispy.
  • Serve and enjoy!

Scallion Pancakes Skillet

  • Preheat skillet over medium heat.
  • When the skillet is hot, add 1 tbsp oil to the pan.
  • Add scallion pancake to the skillet to heat up, till hot and crispy.
  • Takes about 2 minutes on each side from frozen, and 1 minute for each side from defrosted.
  • Serve and enjoy!

Cooking Tip

  • Don’t throw away your bones, they are smoky and flavorful!
  • Put them in a pot, cover with water, simmer for 1 hour, and add some silken tofu and leafy greens, you will have smoky duck soup!
