A delicious cut of lamb and the perfect addition to your table as an appetizer or meal. The individual lamb rib chops contain a single bone each, cut from the rack of lamb. As a versatile cut, the rib chop is tender and can be prepared quickly, whether grilled, pan-fried, or broiled. Sold in packages of 6, each package weighs 1.5 – 2 pounds. While this product cannot be tracked like our Pure Bred lamb meat cuts, all lamb labeled as Elysian Fields Farms are raised to comply with our basic standards and requirements, such as all-natural, non-GMO feeding practices and respectful stewardship of every animal.) Pure Bred lambs are raised respectfully throughout their lives, experiencing very little stress and moderate but consistent activity. This method results in lamb that is tender, pure in flavor, and consistent in texture. Pure Bred Lamb lives up to its name not just from the breed (a traditional cross between a Dorset ewe and a Suffolk ram) but because they use the “Safe Alternative® method,” developed by Keller and Martin, to ensure sustainably raised lamb straight from the farm in Waynesburg, Pennsylvania. No hormones or antibiotics are used in the feed, nor are animals or feed exposed to pesticides.

This package serves 6-8 people and includes

  • 6 Lamb Rib Chops (Portioned)
  • 3 Lamb Loin Chops
  • 1 Boneless Butterflied Leg of Lamb
  • Each rib chop measures 8″ × 6″ 1" and weighs approx. 1.5-2 lbs.
  • Each leg measures approx. 10″ × 6″ 5" and weighs approx. 5.5-8 lbs.
  • Each Loin measures 9″ × 3″ 2" and weighs approx. 1.5-2 lbs.
  • Racks arrive raw, and “frenched” for your convenience.
  • Because there is no frozen inventory of Pure Bred lamb, we require a 6-day lead time for processing this fresh product before it can be shipped overnight to you.
  • Product ships fresh with chilled gel packs in an insulated container that preserves the quality of the meat and the exceptional texture of a product that has never been frozen.
  • Upon arrival, store in the refrigerator or freezer.
  • Lamb can be stored in the refrigerator for up to 10 days.
  • Unopened lamb can be stored in the freezer for up to 6 months in original packaging.

To Serve

Lamb Rib Chops- Grill

  • If frozen, thaw lamb overnight in the refrigerator.
  • Grill for 3-4 minutes on each side (medium-rare, 135° F – 145° F)

Lamb Loin Chop – Grill & Broil

  • If frozen, thaw lamb overnight in the refrigerator.
  • Cook for 9-12 minutes on each side (medium-rare, 135° F – 145° F)
  • Enjoy!

Boneless Leg of Lamb – Oven

  • If frozen, thaw lamb overnight in the refrigerator.
  • Preheat oven to 325° F.
  • Cook for 20 – 25 minutes per pound, until internal temperature reaches (medium-rare, 135° F – 145° F)
