Chef Thomas Keller and shepherd Keith Martin developed Pure Bred Lamb on the principles of respectful and humane treatment of the animals. Pure Bred lambs are raised respectfully throughout their lives, experiencing very little stress and moderate but consistent activity. This method results in lamb that is tender, pure in flavor, and consistent in texture. Pure Bred Lamb lives up to its name not just from the breed (a traditional cross between a Dorset ewe and a Suffolk ram) but because they use the “Safe Alternative® method,” developed by Keller and Martin, to ensure sustainably raised lamb straight from the farm in Waynesburg, Pennsylvania. No hormones or antibiotics are used in the feed, nor are animals or feed exposed to pesticides.
This package serves 16-18 people and includes
- 2 Frenched Racks (9 bones each)
- 1 Boneless Butterflied Leg of Lamb
- 1 Lamb Loin Roast
- Each rack measures approx. 10″ × 5″ × 1″ and weighs approx. 2.5-3 lbs.
- Each leg measures approx. 10″ × 6″ 5" and weighs approx. 5.5-8 lbs.
- Each Loin measures 8″ × 6″ 5" and weighs approx. 3.5-5.5 lbs.
- Racks arrive raw, and “frenched” for your convenience.
- Because there is no frozen inventory of Pure Bred lamb, we require a 6-day lead time for processing this fresh product before it can be shipped overnight to you.
- Product ships fresh with chilled gel packs in an insulated container that preserves the quality of the meat and the exceptional texture of a product that has never been frozen.
- Upon arrival, store in the refrigerator or freezer.
- Lamb can be stored in the refrigerator for up to 10 days.
- Unopened lamb can be stored in the freezer for up to 6 months in original packaging.
To Serve
Frenched Rack of Lamb
- If frozen, thaw lamb overnight in the refrigerator.
- Preheat oven to 400° F.
- Cook for 30-32 minutes until internal temperature reaches (rare, 125° F – 135° F)
- Enjoy!
*Boneless Leg of Lamb – Oven *
- If frozen, thaw lamb overnight in the refrigerator.
- Preheat oven to 325° F.
- Cook for 20 – 25 minutes per pound, until internal temperature reaches (medium-rare, 135° F – 145° F)
- Enjoy!
Boneless Leg of Lamb – Grill
- If frozen, thaw lamb overnight in the refrigerator.
- Cook for 20 – 30, until internal temperature reaches (medium-rare, 135° F – 145° F)

Lamb Loin Roast – Oven
- If frozen, thaw lamb overnight in the refrigerator.
- Preheat oven to 375° F.
- Cook for 1 hour 45 minutes, until internal temperature reaches (rare, 125° F – 135° F)
