Brutti ma Buoni (literally “ugly but good”), also known as the “almond of San Clemente,” are traditional sweets from Prato in Tuscany. They’re made according to an old, simple recipe: Blanched almonds, whipped egg whites, sugar, and hazelnuts are formed into a dough and shaped by hand into small, irregular spheres, placed onto wafers, and baked. Known for their sweetness, rich almond flavor, and unique shapes, they’re best when enjoyed for dessert with a glass of the sweet Tuscan dessert wine called Vin Santo.

Prato Bakery was founded in New York City’s Greenwich Village in 2009 by baker Simone Bertini and his wife Teresa, named after Simone’s hometown, the historic Tuscan city of Prato. The bakery, which moved across the river to Jersey City in 2015 and has opened several more locations since then, has made a name for itself as one of the only places outside of Italy to find picture-perfect, scratchmade cantucci, a traditional Tuscan cookie with a recipe – and a loyal following – that dates back hundreds of years.
