Soft on the inside, with a crunchy crust, these bread rings are protein-packed, comforting, and delicious! Made with milled wheat and chickpeas, these loaves are a testament to ancient Roman business ingenuity. Bread in ancient Rome was sold by weight, and Pliny the Elder writes that some of the bakers in ancient Rome made their loaves heavier by incorporating “lomentum” (bean or pea meal), which meant they could charge more for the loaf. These biscuits incorporate known ancient Roman bread ingredients and are shaped in the form of a “ciambella” – a bread ring known to Italian chefs and bakers since the Renaissance.
