"Demeter's Daughter" Durum Loaf

Demeter was the Greek goddess of agriculture, the harvest, and fertility. Her daughter, Persephone, was designated the queen of the ‘underworld’ after her abduction by Hades. Her cyclical return to the surface of the earth represents the embodiment of spring and the growth of a new year’s crop, especially grain. Athenaeus describes a kneaded roll with a linear cleft through it, shaping the roll to resemble an ancient Greek warship. This version combines the most popular fine flour products used to produce bread for the ancient Roman ‘banqueting class’ – durum and common wheat – resulting in a loaf with a light, fluffy, air crumb, and a chewy, firm crust: the perfect introduction to dinner!
