This Brisket & Gravy was elevated to legendary status at two of Chef Mark’s previous restaurants, Campagna and Fred’s at Barney’s New York. Braised until fork-tender, it’s also become an instant classic on the Mark’s Off Madison menu. It’s served with homemade deli-style corn rye, which is shaped by hand and made with just the right amount of caraway seeds.

Mark Strausman has been one of New York’s most beloved chefs for more than 30 years. A native New Yorker, he rose to fame at NYC’s Campagna and was elevated to superstar status at Upper East Side phenom Fred’s at Barney’s, which he opened in 1996 and oversaw until its 2020 closure. Mark’s Off Madison, which he opened the following year, is the culmination of his career. At Mark’s, Strausman is bringing together all of the food that put him on the map, with the classical European and rustic Italian dishes of his training as well as the traditional Jewish foods of his upbringing in New York City all combining into a quintessential New York experience.
