Stack it onto a fresh-baked ciabatta roll and top with extra tomato sauce and cheese for the ultimate sandwich!

A native New Yorker, he rose to fame at NYC’s Campagna and was elevated to superstar status at Upper East Side phenom Fred’s at Barney’s, which he opened in 1996 and oversaw until its 2020 closure. Mark’s Off Madison, which he opened the following year, is the culmination of his career. At Mark’s, Strausman is bringing together all of the food that put him on the map, with the classical European and rustic Italian dishes of his training as well as the traditional Jewish foods of his upbringing in New York City all combining into a quintessential New York experience.

- 4 Ciabatta Rolls (each 2.5 oz.)
- Tomato Sauce (1 pt.)
- Parmesan Cheese (6 oz.)
- Meal Kit ships frozen with ice packs, may thaw in transit.
- Eggplant Parmesan may be stored in the freezer for 3 months or in the refrigerator for up to 1 day. It is recommended to thaw in the refrigerator overnight. Bake from a refrigerated state.
- Sauce may be stored in the freezer for 3 months or in the refrigerator for up to 5 days.
- Parmesan Cheese may be stored in the refrigerator for up to 7 days.
- Bread may be stored at room temperature for up to 2 days or in the freezer for up to 3 months.
To Serve
- Preheat oven to 350° F.
- Place the eggplant parmesan in the oven uncovered.
- Slice the ciabatta lengthwise in half and place in the oven after 10 minutes.
- Bake the bread for approx. 5 minutes.
- The eggplant needs to bake between 20-25 minutes or until it’s bubbling on the side. If the eggplant is not hot in center after 20 minutes cover with a piece of aluminum foil for the detraction of baking.
- After bread is in the oven, heat the tomato sauce in a pan and use when finishing the sandwiches. Place bread on each plate.
- Let eggplant sit outside the oven after baked for 3 minutes.
- Cut it into 4 pieces from the top of the larger end to the bottom of the larger end of the pan.
- Using a spatula and spoon remove the piece and place on the bottom slice of the ciabatta bread.
- Spoon on hot tomato sauce sprinkle with all the parmesan cheese on all the sandwiches and enjoy.
