Mark Strausman has been one of New York’s most beloved chefs for more than 30 years. A native New Yorker, he rose to fame at NYC’s Campagna and was elevated to superstar status at Upper East Side phenom Fred’s at Barney’s, which he opened in 1996 and oversaw until its 2020 closure. Mark’s Off Madison, which he opened the following year, is the culmination of his career. At Mark’s, Strausman is bringing together all of the food that put him on the map, with the classical European and rustic Italian dishes of his training as well as the traditional Jewish foods of his upbringing in New York City all combining into a quintessential New York experience.
This package serves 3-4 people and includes
- 2 Large Chicken Cutlets, precooked (each 6 oz.)
- Vodka Sauce (1 pt.)
- Parmesan Cheese (4 oz.)
- Rigatoni Pasta (approx. 8 oz.)
- Meal Kit ships frozen with ice packs, may thaw in transit.
- Chicken Cutlets may be stored in the freezer for 3 months or in the refrigerator for up to 1 day. It is recommended to thaw in the refrigerator overnight. Bake from a refrigerated state.
- Sauce may be stored in the freezer for 3 months or in the refrigerator for up to 5 days.
- Parmesan Cheese may be stored in the refrigerator for up to 7 days.
- Rigatoni Pasta may be stored at room temperature for up to 1 month.
To Serve
- Preheat oven to 350° F.
- Place the Chicken parmesan in the oven uncovered. The chicken needs to be baked for between 25 – 30 minutes or until it’s bubbling on the side. If the chicken is not hot in center after 25 minutes cover with a piece of aluminum foil for the detraction of baking.
- Heat the vodka sauce in a pan and use when finishing the chicken.
- Let chicken sit outside the oven after baked for 3 minutes.
- Place the chicken on a plate, spoon on hot vodka sauce sprinkle with all the parmesan cheese on top and enjoy.
- Cook pasta to your liked tenderness.
