Started in 2015 by Pooja Bavishi, Malai Ice Cream uses ice cream as a delicious blank slate to showcase the familiar flavors of her childhood – warm spices and aromatic flavors like ginger, nutmeg, cardamom, and saffron. Malai means “cream of the crop,” and is a fitting name for Pooja’s ice cream creations, which draw inspiration from globally-sourced ingredients to create unexpected twists on classic ice cream flavors. Pooja crafts her small-batch artisanal ice cream by hand, creating totally unique and satisfying flavors.

- 1 Cardamom Banana Bread Ice Cream Cake – Inspired by Palak’s fan-favorite Cardamom Banana Muffins, this festive ice cream cake features a spiced banana bread base, layered with Malai’s signature cardamom ice cream, and finished with a golden muffin crumble.
- 1 Coconut Burfi Ice Cream Cake – This one’s for the coconut lovers—and an ode to Palak’s coconut obsession! This celebratory cake layers Malai’s coconut and rose ice creams with soft coconut cake and a crown of traditional coconut burfi.
- 1 Carrot Halwa Ice Cream Pint – Inspired by gajar ka halwa this flavor has become a tradition of its own at Malai. Slow-cooked carrots, simmered in ghee and cardamom, are folded into creamy ice cream for a scoop that’s rich, spiced, and full of warmth.
- 4 Peanut Butter Chocolate Kulfi Pops – Creamy kulfi swirled with spiced peanut butter (star anise and a hint of cayenne), studded with crunchy peanut chikki, half-dipped in rich chocolate, and topped with more chikki for extra crunch.
