It’s the ultimate meaty indulgence! Only served at the restaurant on Saturdays, these jumbo smoked beef ribs command lines around the block. This is a whole, fully cooked, frozen, vacuum sealed, bone-in rack of three beef short ribs. Each rib weighs at least a pound!

John Lewis is one of America’s most legendary pitmasters, and he’s earned a cult-like following for his unerring dedication to barbecue. After time in the competitive BBQ circuit, he helped Aaron Franklin open the legendary Franklin Barbecue and partnered with LeAnn Mueller to open the much-loved La Barbecue before moving to Charleston to introduce the Lowcountry to the world of Texas-style barbecue. Lewis Barbecue opened in June 2016 and since then it’s become renowned as one of America’s best BBQ joints for its expertly-smoked spare ribs, beef ribs, Texas “hot guts” sausage, turkey, and – most famously – legendary Prime beef brisket.

This package includes your choice of 1 Rack or 2 Racks of Beef Short Ribs

  • Each rack serves 3-4 people, includes 3 ribs and weighs approx. 3 lbs.
    ***Two racks serves 6-8 people, includes 6 ribs and weighs approx. 6 lbs.
  • Meats ship frozen with dry ice.
  • Dry ice may dissipate in transit.
  • Do not remove dry ice with bare hands.
  • Meats should be stored in the freezer until ready to cook or for up to 90 days.
  • Once ready to cook, thaw meat in the refrigerator overnight or for up to 24 hours. Must be reheated from 41° F to 165° F within 2 hours.

To Serve

Sous Vide Method

  • Do not break vacuum seal. If frozen, defrost overnight in the sealed package.
  • Bring water to a simmer in a large pot.
  • Submerse the sealed package into the pot of simmering (not boiling) water. If the seal is broken follow the oven method.
  • Heat for approx. 30-60.
  • Remove from water and test for preferred internal temperature. We recommend 165° F.
  • Enjoy!

Oven Method

  • If frozen, defrost overnight in the sealed package.
  • Preheat the oven to 250° F.
  • Remove meat & juices from the sealed package over lots of foil.
  • Slice 8-10 pats of butter, and place on top of the meat.
  • Wrap tightly, completely covering the meat with foil.
  • Heat for approx. 30 – 60 minutes.
  • Test for preferred internal temperature. We recommend 165° F.

John was gifted his own smoker for his 18th birthday, and moved to Austin shortly thereafter to start his culinary career.
