Kelly’s legendary cold New England-style lobster rolls are served on a toasted split-top hot dog bun filled with succulent fresh lobster meat, simply tossed with mayonnaise and diced celery. Enjoy with a dill pickle spear and potato chips on the side!

Kelly’s Roast Beef got its start as a hot dog stand, opened by Frank V. McCarthy and Raymond Carey in 1951 on Revere Beach, about five miles north of Downtown Boston. The duo also ran an event hall, and one day a canceled party left them with lots of spare roast beef, so they decided to slice it thin and pile it on a grilled burger bun. The sandwich was a smash hit, and they never looked back. Today, Kelly’s is a Massachusetts icon, and it’s still family-owned-and-operated and renowned for its roast beef, lobster rolls, and chowder. Kelly’s original location is Revere Beach’s most famous landmark, and three additional locations have opened throughout the state.

This package serves 4 people and includes everything you need to make 4 Lobster Rolls

  • Pre-mixed Lobster Meat (24 oz. Total)
    • Mix includes Tail, Knuckle, & Claw Meat
  • 4 Hot Dog Rolls (each 6 oz.)
  • 2 containers Liquid Butter (each 1.5 oz.)
  • 4 bags Utz Potato Chips (each 4 oz.)
  • Each Hot Dog Roll measures 5.5″ × 2″ × 1.5″
  • Lobster Rolls ship with ice packs, may thaw in transit
  • Upon arrival, store lobster meat in the refrigerator for up to 24 hours. Note: DO NOT FREEZE LOBSTER MEAT! Lobster was previously frozen, doing so will destroy the texture.
  • Pickles may be stored in the refrigerator for 2-3 days.
  • Butter may be stored at room temperature for up to 90 days, Bread may be stored at room temperature for 2-3 days, and chips may be stored at room temperature for up to 30 days.

To Serve

  • Open both containers of liquid butter and pour both into a shallow bowl.
  • Using a pastry brush or silicone brush “paint” each unbaked side of all four rolls.
  • Set an 8" or 10" shallow pan onto your cooktop and set temperature or flame to a medium – low setting.
  • Remove lobster meat from refrigerator and cut open pouch.
  • Pour lobster mixture into a wide bowl for portioning.
  • Place hot dog rolls into the preheated pan. Note: New England hot dog rolls have a lite and delicate texture. They will need to be carefully handled while toasting.
  • Gently place a hamburger-style spatula on top of the rolls, resting the handle on the edge of the pan. You are trying to get good surface contact. Toast for 30 seconds and then remove the spatula and use it to flip the rolls once they are golden brown. Additional time may be required to achieve the desired color. Turn the hot dog rolls over and repeat the process on the second side.
  • Toast and remove after golden brown. Repeat this process with the remaining hot dog rolls.
  • Once the rolls have been toasted, allow them to cool for a few minutes. They will still be warm but will not be crushed if allowed to cool slightly before being filled.
  • Divide the lobster meat mixture into equal portions and fill each hot dog roll with lobster.
  • Enjoy with a pickle and chips immediately.
