After establishing himself as one of America’s most renowned Southern chefs – winning the James Beard Award for Best Chef Southeast in the process – chef Sean Brock made the bold decision to to open four ambitious and unique Nashville F&B endeavors including the retro-inspired Joyland. At Joyland, which opened in 2020, the “Chef’s Table” star has turned his attention to two of the most delicious foods and earth: burgers and fried chicken sandwiches. Brock has put the same care and attention to classic American fast food as he does to fine dining fare, with astonishing results.

To Serve
Burgers – Oven
- Preheat oven to 350° F.
- On a lined baking tray, place patties, top with 1 slice of cheese per patty, and heat in oven until heated through, about 5 minutes.
Burgers – Grill
- Preheat your grill to 350° F – 400° F.
- Take the patties out of the plastic packaging, and while they are still in between the sheets of deli paper, Using a spatula or other press, smash the burgers on the griddle until they are the diameter of the bottom bun, about 3.5" – 4".
- Season liberally with the salt and pepper mix on one side.
- Grill the patties for about 90 seconds on one side, flip, and add the cheese.
- Continue to cook until the cheese is melted.
- Remove patties from the grill and let rest for 30 seconds before assembling the burger.
Burgers – Griddle
- Preheat your griddle to 400° F.
- Remove the patties from the plastic packaging and open the deli paper.
- Season the patties liberally with salt and pepper on one side.
- Flip the burgers onto the griddle.
- Take the patties out of the plastic packaging, and while they are still in between the sheets of deli paper, Using a spatula or other press, smash the burgers on the griddle until they are the diameter of the bottom bun, about 3.5" – 4".
- Cook for 90 seconds and scrape your burger off the griddle. Try and get as much of the crust that has been developed to stay with the burger.
- Place a slice of American cheese per patty.
- Continue to cook until cheese is melted (cover with an inverted bowl if possible).
- Remove patties from the griddle and let rest for 30 seconds before assembling the burger. We do not suggest scraping a griddle coated with Teflon.
Assembling the Burgers
- Toast the buns with a bit of butter until golden brown.
- Spread about an ounce of Joysauce onto the top bun.
- Place 3-5 pickles, spread out, on the Joysauce.
- Shave a few rings of onion, about 1/8 thick. Place a small handful on top of the pickles.
- Place patty with cheese, stacked, on the bottom bun.
- Put the top bun on the bottom bun and serve!
Fries
- Preheat oven to 350° F.
- Spread out on a lined baking tray and add to preheated oven – cook until crispy, around 18 minutes (15 minutes for convection oven).
- Serve and enjoy!

James Beard Winner Sean Brock's Ode to Burgers & Fried Chicken

Joyland’s roadside-style burgers start with a custom blend of grass-fed beef from Tennessee’s Bear Creek Farm, and they’re seared to crusty perfection on a griddle before being topped with American cheese, onion, pickles, and secret Joy Sauce. And as for the fried chicken sandwiches, they’re made by dredging chicken thighs in buttermilk and seasoned flour before being fried golden-brown and topped with BBQ seasoning, pickle slaw, and Joy Sauce. Joyland has earned heaps of praise and commanded lines out the door since it first opened, and now it’s shipping nationwide!
