Back in 1954, Jim “Jimboy” Knudson developed a winning recipe: Jimboy’s proprietary seasoned ground beef, encased in a crispy stone-ground corn tortilla, topped with crisp lettuce and freshly shredded American cheese and finished with Jimboy’s signature dusting of parmesan cheese. Word quickly spread, and soon everyone from locals to Rat Packers became devoted fans. Nowadays, Jimboy’s has grown to over 40 locations throughout California, Nevada, and Texas. Jimboy’s recipes remain the same all these years later, and a reliance on fresh, premium ingredients, small-batch cooking, and making everything from scratch daily will endear it to generations to come.
This package serves 4-6 people and includes
- 4 Chili Cheese Burritos (each 7 oz.)
- 12 Pre-Made Signature Ground Beef Tacos
- 12 Taco Sauce Packets
- Shredded Lettuce (12 oz.)
- Parmesan Cheese (2 oz.)
- 4 Bavarian Cream-Filled Churros
- Cinnamon Sugar Mix (2 oz.)
- Hershey’s Chocolate sauce (4 oz.)
- Each burrito measures approx. 5.5" long, and 2" in diameter
- Items ship frozen with ice packs, may thaw during transit.
- Upon arrival, store items in the freezer.
- Burritos can be stored in the freezer for up to 3 months.
- Tacos can be kept at room temperature for up to 4 hours, 3 days in the fridge, or frozen up to 2 weeks.
- Churros can be stored in the freezer for up to 3 months.
- Chocolate sauce can be stored in the refrigerator.
- Cinnamon sugar can be stored at room temperature.
To Serve
Microwave – Burrito From Frozen
- Remove all wrapping from burrito and re-wrap loosely in a paper towel.
- Place in microwave on defrost for 4 minutes.
- Then remove the paper towel and heat burrito on high for about 30 seconds or until hot.
- In a pan heat a small amount of oil and place burrito in the pan until browned and crisp on both sides.
- Serve and enjoy!
Microwave – Burrito From Thawed
- Let burritos sit on the counter for 30 mins or until fully thawed.
- Remove all wrapping from burrito and re-wrap loosely in a paper towel.
- Place in the microwave on high for about 1 to 1.5 minutes or until hot. Make sure the cheese inside in melted.
- Then in a pan heat a small amount of oil and place burrito in the pan until browned and crisp on both sides.
- Serve and enjoy!
Beef Tacos
- Pre-heat the oven to 425°F.
- Remove tacos from packaging.
- Place pre-made tacos on an oven-safe pan (preferably a vented pan) with about 1 inch of space between.
- Bake for about 5 to 10 minutes, remove from oven, add parmesan cheese, and lettuce.
- Place in a Jimboy’s taco bag.
- Serve and enjoy!
Churros
- Preheat oven to 400° F.
- Remove the desired amount of Churros from the freezer & remove plastic wrap.
- Place frozen Churros about 1” apart on a non-stick cookie sheet, then place on the middle rack of the oven.
- Heat Churros for about 8 minutes or until heated through. Using tongs check the bottom of Churros. Don’t allow it to burn on the bottom. If starting from thawed check at 5 minutes and remove if done.
- Remove churros from oven and using tongs place on a plate or clean surface.
- Immediately sprinkle all sides of heated churros with cinnamon/sugar blend.
- Serve with or without the chocolate sauce.
- Serve and enjoy!

Believe it or not, back then few people had even heard of the taco, and Jimboy had to spell the word out phonetically on the side of his food truck, which he parked at sunny King’s Beach on Lake Tahoe. Word quickly spread, a brick-and-mortar opened nearby in 1958, and soon everyone from locals to Rat Packers became devoted fans.
Nowadays, Jimboy’s has grown to over 40 locations throughout California, Nevada, and Texas, and it’s a beloved regional chain.
