This package includes

- Steaks ship uncooked and frozen with dry ice, do not remove dry ice with bare hands
- Steaks are cut by master butchers, immediately vacuum sealed, and blast frozen to -30F
- The blast freezing method completely protects and preserves the steaks in their original, perfectly-aged state and in no way compromises their quality
- An ice- or cold-water bath is recommended for a quick thaw but the best way is to allow your steaks to defrost in your refrigerator 24-48 hours
- Never defrost steaks in warm or hot water
- Frozen, uncooked steaks may be enjoyed within 4 months
To Serve (Recommended)
Strip
- Thaw in your refrigerator for 24-48 hours.
- Generously coat the surface of your steak with salt. For more info on salting, view our salting tips.
- Cook or grill your strip steak to medium-rare. This is when the steak reaches an internal temperature of 135 degrees Fahrenheit. The outside of the steak should have a beautiful brown color while the inside will still be pink. Another option is the reverse sear.
- LET YOUR STEAK REST! Letting your strip steak rest is essential for letting the juices and fat settle after searing or grilling at high temperatures. How long is a debate that many chefs have varied opinions on. The thicker the cut of beef, the longer the rest. We recommend a minimum of 5 minutes and no more than 10 minutes of resting to achieve what we like to call steak nirvana.

Filet
- Thaw in your refrigerator for 24-48 hours.
- Preheat your oven to 400 degrees, wash your produce, and prepare your grill as needed (you’ll want the temperature to be around 450 degrees).
- Pat your filets dry and season with a good pinch of sea salt and cracked pepper on all sides. Set aside to come to room temperature.
- Place your filets on the grill and close the lid. We recommend about 4-5 minutes per side. Keep an eye on your internal temperature – you’ll want to remove the filets when they are approaching 130 degrees for medium-rare.
- Serve and enjoy!
