Pawpaw and brown sugar cheesecake is topped with pawpaw gelee and a traditional sour cream topping, baked in a signature all-butter shortbread cookie crust. When Kipp Lykins and Jane Fox of Paw Paw Farms, Inc. (one of the largest pawpaw groves in Illinois) decided that cheesecake and pawpaw would make a great combination, he turned to Chicago’s own Eli’s Cheesecake. Pawpaw, one of the only fruits indigenous to America, has a custardy texture and a flavor that is a cross between a banana and a mango. Eli’s pastry chefs got to work and created this delicious dessert, which was also the star of the 2nd annual Pawpaw Festival in Paw Paw, Illinois.

Eli M. Schulman is a legend in the Windy City. After debuting his cheesecake at the Taste of Chicago in 1980, Eli’s cheesecake was quickly declared the best cheesecake in Chicago. Each Eli’s cheesecake is slow baked in small batches with the finest local ingredients for the best flavor and texture, then topped with hand-decorated designs. Turning out over 20,000 daily, Eli’s is not only a local favorite, but a national one as well.
